Easy Sunday Brunch

Oh I do love a bit of a treat on a Sunday morning...sometimes it's a croissant or the big Irish breakfast but other times I want something nice without too much guilt.

I threw this little brunch together recently and although it's certainly not calorie free, it is a lighter alternative to many brunch options and it packs a punch on flavour.


Ingredients:

  • Two toasted crumpets ( Available from Tesco and M&S)
     
  • 1 banana chopped
     
  • A good tablespoon of full fat natural yoghurt ( I don’t believe in using low fat yoghurts as they tend to be full of sugar)
     
  • 1 tablespoon of Crunchy Linseed with Cranberry and Almonds – I go this in Aldi but you could use granola
     
  • A good squidge of honey

Toast the crumpets, pile the rest of ingredients on top and enjoy with your favourite Sunday morning hit drink – mine’s a decaf coffee!
